Cottage Cheese + Banana Protein Pancakes

Pancakes are such a good option when it comes to diversifying breakfast and the kids love them. Some pancakes are full of refined sugars and spike blood sugars. I personally feel this in myself but I also see it in my children. We all absolutely need to balance blood sugars to feel satisfied, focussed and sustained. Try these babies and see how you feel. The cottage cheese adds a nice protein hit. They can contain up to 20g protein per serve!

INGREDIENTS (makes enough for 10+ pancakes)

  • 1 cup rolled oats

  • 1 ripe banana

  • 2 tsp vanilla extract

  • 2 tsp baking powder

  • 1 tsp cinnamon

  • 2 eggs

  • 1/2 cup full-fat cottage cheese

  • 1 tbsp butter/ghee for frying

Optional toppings: hemp seeds, nut butters, kefir/yoghurt, berries

METHOD

  1. Add all ingredients except the cooking oil to a high powered blender or food processed and blend until smooth

  2. Heat up your frying pan on medium heat, add the butter and melt

  3. Once melted, add your pancake batter, about heaped tbsp per pancake

  4. Once bubbling, flip over until golden brown and cooked through
