Walnut + Spinach Pesto
This recipe is actually a very fertility-supportive combination because it brings together healthy fats, antioxidants, nitrates, minerals, and microbiome-supportive compounds. The walnut + extra virgin olive oil combination is particularly powerful for sperm health because it provides the exact fat profile and antioxidant protection that sperm cells need. Sperm membranes are extremely sensitive to oxidative stress and depend heavily on dietary fats for their structure. I also love pesto’s to add diversity to the diet without really doing much and they also happen to be extremely easy to make!
INGREDIENTS
80g parmesan cheese
1 garlic clove
30g walnuts
80g fresh organic spinach
150g of extra virgin olive oil
1/4 tsp sea salt
METHOD
Grate the parmesan and add to your blender.
Add walnuts, garlic, spinach, olive oil and salt, then blend. How long you blend for depends on how high powered your blender is, you are aiming for a smooth consistency so if you need, scrap your sides down and reblend to ensure this.
Transfer in batches to airtight containers and cover with a layer of oil, then store in the fridge for up to 1 month or freeze for up to 3 months. I often freeze them in ice cube moulds for easy meals in minutes.
